Vegetable Fried Rice
You can't go wrong with vegetable fried rice. It can pull double duty as a main dish or a simply delectable side. Forget the temptations of take-out, instead eat in tonight!

- 3 cup(s) organic brown rice
- 2 tablespoon(s) olive oil
- 1 zucchini, chopped
- 1 crookneck squash, chopped
- 1 onions, chopped
- 2 garlic cloves, minced
- 1 cup(s) broccoli florets
- 2 organic cage-free eggs
- 1 cup(s) peas
- 1 tablespoon(s) soy sauce (add more if desired)
Chop zucchini, squash, onion and garlicSteam broccoliAdd tbsp of oil to rice cooker, before adding washed rice.
Add rice and water, cook in rice cooker.
Add 1 tbsp of oil to wok and warm on medium heat.
Add chopped zucchini and squash; saute for about 2-3 minutes.
Add onion, garlic, peas and broccoli.
Saute vegetables until tender.
In another pan, scramble 2 eggsAdd cooked brown rice, eggs and soy sauce to vegetables in wok, mix while cooking on medium heat for 2-3 minutes.
Serve and enjoy.
