Ingredients
  

  • 3 cup(s) organic brown rice
  • 2 tablespoon(s) olive oil
  • 1 zucchini, chopped
  • 1 crookneck squash, chopped
  • 1 onions, chopped
  • 2 garlic cloves, minced
  • 1 cup(s) broccoli florets
  • 2 organic cage-free eggs
  • 1 cup(s) peas
  • 1 tablespoon(s) soy sauce (add more if desired)

Instructions
 

  • Chop zucchini, squash, onion and garlicSteam broccoliAdd tbsp of oil to rice cooker, before adding washed rice.
  • Add rice and water, cook in rice cooker.
  • Add 1 tbsp of oil to wok and warm on medium heat.
  • Add chopped zucchini and squash; saute for about 2-3 minutes.
  • Add onion, garlic, peas and broccoli.
  • Saute vegetables until tender.
  • In another pan, scramble 2 eggsAdd cooked brown rice, eggs and soy sauce to vegetables in wok, mix while cooking on medium heat for 2-3 minutes.
  • Serve and enjoy.
