- 8 tablespoon(s) light mayonnaise
- 1 tablespoon(s) lemon juice
- 1/4 teaspoon(s) ground black pepper
- 16 ounce(s) cooked, chopped chicken
- 1 celery, chopped
- 1/2 cup(s) blanched slivered almonds
- 1/4 tablespoon(s) dill weed
- 1/2 teaspoon(s) dijon mustard
- 1 tablespoon(s) fresh parsley
- 1 teaspoon(s) salt, to taste
Spray a skillet with cooking spray over medium-high heat, add almonds and toast until browned.
Shake pan frequently.
In a medium bowl, combine light mayonnaise, lemon juice, dill weed, parsley, dijon mustard and pepper.
Toss in chicken, almonds, and celery.
season with salt.
Refrigerate for later in a sealed container, serve over a salad, or spread on bread, roll or croissant.
