Shrimp Toast

- 1 cup(s) reduced fat ricotta cheese
- 4 ounce(s) can shrimp, rinsed and drained
- 3 tablespoon(s) reduced fat mayonnaise
- 1/8 cup(s) plain yogurt
- 1 ounce(s) Drambuie
- 1 tablespoon(s) lemon juice
- 1 tablespoon(s) cilantro
- 1 dash(es) salt
- 1 dash(es) pepper
- 8 toast points
In a medium bowl, combine the ricotta cheese, shrimp, mayonnaise, yogurt, Drambuie, lemon juice, cilantro, and salt and pepper.
Stir until smooth.
Place the slice of bread on a baking sheet and broiler for 2 minutes on each side.
Spread one side of each toast point or bread slice with the shrimp mixture, and return to the broiler until the mixture bubbles, about 1 to 2 minutes.
Remove from the broiler and put one shrimp on top of each slice.
Serve.
