Ingredients
  

  • 1 cup(s) reduced fat ricotta cheese
  • 4 ounce(s) can shrimp, rinsed and drained
  • 3 tablespoon(s) reduced fat mayonnaise
  • 1/8 cup(s) plain yogurt
  • 1 ounce(s) Drambuie
  • 1 tablespoon(s) lemon juice
  • 1 tablespoon(s) cilantro
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 8 toast points

Instructions
 

  • In a medium bowl, combine the ricotta cheese, shrimp, mayonnaise, yogurt, Drambuie, lemon juice, cilantro, and salt and pepper.
  • Stir until smooth.
  • Place the slice of bread on a baking sheet and broiler for 2 minutes on each side.
  • Spread one side of each toast point or bread slice with the shrimp mixture, and return to the broiler until the mixture bubbles, about 1 to 2 minutes.
  • Remove from the broiler and put one shrimp on top of each slice.
  • Serve.
