Preheat the oven to 375 F.
Spray a 9 x 13-inch baking pan with cooking spray.
Arrange half of the slices of potatoes in the bottom of the pan.
Lightly brush slices with olive oil.
Sprinkle the flour over the layer and top with the remaining potatoes.
Pour the almond milk over the potatoes and bake for 45 minutes.
Meanwhile, lightly spray a saute pan with cooking spray.
Saute the turkey bacon over medium-high heat for 10 minutes.
Add the onion to the pan and cook for 10 minutes.
Drain and set aside.
Remove the potatoes from the oven and spread the sour cream over the cooked potatoes.
Cover with turkey bacon mixture.
Sprinkle the cheese over the mixture and bake for 20 minutes more.
Remove from the oven and serve.
