Ingredients
  

  • 7 potatoes ( 2 pounds), cut into 1/8 inch-thick slices
  • 1 tablespoon(s) extra virgin olive oil
  • 1/5 cup(s) flour
  • 1 cup(s) almond milk
  • 8 ounce(s) turkey bacon
  • 1 onion, chopped into 1/4-inch pieces
  • 1 cup(s) sour cream, reduced fat
  • 2 cup(s) shredded reduced fat Swiss cheese
  • 1 cooking spray

Instructions
 

  • Preheat the oven to 375 F.
  • Spray a 9 x 13-inch baking pan with cooking spray.
  • Arrange half of the slices of potatoes in the bottom of the pan.
  • Lightly brush slices with olive oil.
  • Sprinkle the flour over the layer and top with the remaining potatoes.
  • Pour the almond milk over the potatoes and bake for 45 minutes.
  • Meanwhile, lightly spray a saute pan with cooking spray.
  • Saute the turkey bacon over medium-high heat for 10 minutes.
  • Add the onion to the pan and cook for 10 minutes.
  • Drain and set aside.
  • Remove the potatoes from the oven and spread the sour cream over the cooked potatoes.
  • Cover with turkey bacon mixture.
  • Sprinkle the cheese over the mixture and bake for 20 minutes more.
  • Remove from the oven and serve.
