Mint Mashed Potatoes

- 6 cup(s) Yukon Gold potatoes, peeled and quartered
- 1 teaspoon(s) salt
- 1/2 cup(s) evaporated milk
- 1/4 cup(s) apple butter
- 1/2 ounce(s) milk chocolate, chopped
- 1 dash(es) black pepper
- 2 tablespoon(s) lemon zest
- 2 tablespoon(s) mint
Fill a large pot with cold water.
Place the potatoes.
Add salt and bring to a boil.
Lower the heat and simmer, covered, for 20 minutes.
In a small saucepan heat, the milk and apple butter until the butter has melted.
Drain the potatoes and return them to the pot.
Add the milk mixture and chocolate.
Mash the potato mixture.
Add salt and pepper.
Stir in the lemon zest and mint.
Serve.
