
Mint Mashed Potatoes
Here is a recipe that is “mint” to be. Step up your mashed potato preparation with this simple prep. Sweeten the pot with chocolate, mint and apple butter.
Ingredients
- 6 cup(s) Yukon Gold potatoes, peeled and quartered
- 1 teaspoon(s) salt
- 1/2 cup(s) evaporated milk
- 1/4 cup(s) apple butter
- 1/2 ounce(s) milk chocolate, chopped
- 1 dash(es) black pepper
- 2 tablespoon(s) lemon zest
- 2 tablespoon(s) mint
Instructions
- Fill a large pot with cold water.
- Place the potatoes.
- Add salt and bring to a boil.
- Lower the heat and simmer, covered, for 20 minutes.
- In a small saucepan heat, the milk and apple butter until the butter has melted.
- Drain the potatoes and return them to the pot.
- Add the milk mixture and chocolate.
- Mash the potato mixture.
- Add salt and pepper.
- Stir in the lemon zest and mint.
- Serve.
