Low Fat Peanut Butter Cookies

Butter up your loved ones with these scrumptious cookies. A perfect after-school snack, these are rich in flavor but low in fat. C stands for cookie -- and that's good enough for these.

Ingredients
  

  • 1 package moist supreme sugar free premium yellow cake mix
  • 10 2/3 tablespoon(s) creamy peanut butter
  • 1/2 cup(s) applesauce
  • 2 tablespoon(s) egg whites
  • 1/8 cup(s) skim milk
  • 2 tablespoon(s) vanilla extract
  • 1/4 cup(s) granulated sugar

Instructions
 

  • Preheat oven to 375 F.
  • Set aside two ungreased baking sheets.
  • Place the cake mix, peanut butter, applesauce, eggwhites, milk, and vanilla in a large mixing bowl and beat with an electric mixer on low speed until the cookie dough is smooth.
  • Place the sugar in a shallow bowl.
  • Form the dough into 1-inch balls.
  • Roll each ball of dough in the sugar and arrange 12 balls on each backing sheet 2 to 3 inches apart.
  • Place the baking sheets in the oven and bake the cookies until golden brown, 10 to 15 minutes.
  • Immediately transfer the cookies to wire racks to cool.
  • Repeat with the remaining dough.
