
Low Fat Peanut Butter Cookies
Butter up your loved ones with these scrumptious cookies. A perfect after-school snack, these are rich in flavor but low in fat. C stands for cookie — and that’s good enough for these.
Ingredients
- 1 package moist supreme sugar free premium yellow cake mix
- 10 2/3 tablespoon(s) creamy peanut butter
- 1/2 cup(s) applesauce
- 2 tablespoon(s) egg whites
- 1/8 cup(s) skim milk
- 2 tablespoon(s) vanilla extract
- 1/4 cup(s) granulated sugar
Instructions
- Preheat oven to 375 F.
- Set aside two ungreased baking sheets.
- Place the cake mix, peanut butter, applesauce, eggwhites, milk, and vanilla in a large mixing bowl and beat with an electric mixer on low speed until the cookie dough is smooth.
- Place the sugar in a shallow bowl.
- Form the dough into 1-inch balls.
- Roll each ball of dough in the sugar and arrange 12 balls on each backing sheet 2 to 3 inches apart.
- Place the baking sheets in the oven and bake the cookies until golden brown, 10 to 15 minutes.
- Immediately transfer the cookies to wire racks to cool.
- Repeat with the remaining dough.
