Light Chocolate Rice Pudding
We're not pudding you on -- this creamy, dreamy dessert is downright delicious! We have taken a family favorite treat and put a chocolate spin on it. Too good to resist. Now, that's a grain of truth.

- 2 1/2 cup(s) short-grain rice
- 1 teaspoon(s) salt
- 4 cup(s) low fat milk
- 1 tablespoon(s) cocoa powder
- 6 egg yolks
- 2 ounce(s) dark chocolate, grated
Place rice and salt in the slow cooker.
Stir in the milk and cocoa powder, then add sugar and continue to stir until well combined.
Cover slow cooker and cook on low for 2-3 hours.
Shut off slow cooker and beat in egg yolks and leave to settle, unheated for a few minutes.
Serve into individual serving dishes, sprinkle with grated chocolate.
Let cool, then serve.
