
Light Chocolate Rice Pudding
We’re not pudding you on — this creamy, dreamy dessert is downright delicious! We have taken a family favorite treat and put a chocolate spin on it. Too good to resist. Now, that’s a grain of truth.
Ingredients
- 2 1/2 cup(s) short-grain rice
- 1 teaspoon(s) salt
- 4 cup(s) low fat milk
- 1 tablespoon(s) cocoa powder
- 6 egg yolks
- 2 ounce(s) dark chocolate, grated
Instructions
- Place rice and salt in the slow cooker.
- Stir in the milk and cocoa powder, then add sugar and continue to stir until well combined.
- Cover slow cooker and cook on low for 2-3 hours.
- Shut off slow cooker and beat in egg yolks and leave to settle, unheated for a few minutes.
- Serve into individual serving dishes, sprinkle with grated chocolate.
- Let cool, then serve.
