- 2 tablespoon(s) extra virgin olive oil
- 1/2 cup(s) minced onion
- 1/4 teaspoon(s) curry powder
- 1 cup(s) skim milk
- 1/2 cup(s) half and half
- 1/4 teaspoon(s) nutmeg
- 1 tablespoon(s) parsley
- 16 ounce(s) ground smoked ham; cooked
- 2 teaspoon(s) prepared mustard
- 1 cup(s) bread crumbs
- 1 1/2 cup(s) egg substitute
- 1 ounce(s) water
- 16 tablespoon(s) coconut oil
In a saucepan, heat olive oil and stir onion and curry powder, flour.
Saute until translucent.
Gradually add milk and half-and-half.
Bring to a boil; cook and stir in nutmeg and parsley and cook for two minutes.
Make sure that the sauce is thick.
Remove from heat and stir in the ham and mustard.
Mix well.
Cover and chill for 1 hour.
Shape mixture into logs and roll in bread crumbs.
Whisk together egg substitute and water.
Dip ham logs into egg mixture and roll them in the breadcrumbs again.
Heat coconut oil in a fryer to 375 F.
Fry croquettes a few at a time for 3 minutes each or until golden brown.
Drain on paper towels; Serve hot.
