Ingredients
  

  • 2 tablespoon(s) extra virgin olive oil
  • 1/2 cup(s) minced onion
  • 1/4 teaspoon(s) curry powder
  • 1 cup(s) skim milk
  • 1/2 cup(s) half and half
  • 1/4 teaspoon(s) nutmeg
  • 1 tablespoon(s) parsley
  • 16 ounce(s) ground smoked ham; cooked
  • 2 teaspoon(s) prepared mustard
  • 1 cup(s) bread crumbs
  • 1 1/2 cup(s) egg substitute
  • 1 ounce(s) water
  • 16 tablespoon(s) coconut oil

Instructions
 

  • In a saucepan, heat olive oil and stir onion and curry powder, flour.
  • Saute until translucent.
  • Gradually add milk and half-and-half.
  • Bring to a boil; cook and stir in nutmeg and parsley and cook for two minutes.
  • Make sure that the sauce is thick.
  • Remove from heat and stir in the ham and mustard.
  • Mix well.
  • Cover and chill for 1 hour.
  • Shape mixture into logs and roll in bread crumbs.
  • Whisk together egg substitute and water.
  • Dip ham logs into egg mixture and roll them in the breadcrumbs again.
  • Heat coconut oil in a fryer to 375 F.
  • Fry croquettes a few at a time for 3 minutes each or until golden brown.
  • Drain on paper towels; Serve hot.
