Grilled Vegetable Vegan Cheese Sandwich
Sub-way? No-way! This vegetable sandwich is better than any sub place! You'll be packing your lunch instead of dining out. Stuffed with sauteed green peppers and onions, it's a sandwich that will get the job done.

- 2 whole wheat bread slices
- 1/4 cup(s) green peppers, chopped
- 1/4 cup(s) onions, chopped
- 2 cucumber slices, cut in half
- 2 grape tomato, sliced in half
- 1/4 cup(s) romaine lettuce
- 1/4 cup(s) baby spinach
- 1 vegan cheddar style slices
- 1 kosher dill sandwich slices
- 1 teaspoon(s) spicy brown mustard
- 1/4 cup(s) alfalfa sprouts
- 1/2 tablespoon(s) olive oil
Add oil to skillet, warm on medium heat.
Saute green peppers and onions for about 2-3 minutes.
Set aside.
Place bread slices into pan; add vegan cheese, sauteed peppers and onions, tomatoes, cucumber, lettuce, spinach, and pickle atop of bread slice.
Grill sandwich until crispy and golden brown on both sides.
Remove from heat.
Add sprouts and mustard.
Cut in half and enjoy!.
