
Grilled Vegetable Vegan Cheese Sandwich
Sub-way? No-way! This vegetable sandwich is better than any sub place! You’ll be packing your lunch instead of dining out. Stuffed with sauteed green peppers and onions, it’s a sandwich that will get the job done.
Ingredients
- 2 whole wheat bread slices
- 1/4 cup(s) green peppers, chopped
- 1/4 cup(s) onions, chopped
- 2 cucumber slices, cut in half
- 2 grape tomato, sliced in half
- 1/4 cup(s) romaine lettuce
- 1/4 cup(s) baby spinach
- 1 vegan cheddar style slices
- 1 kosher dill sandwich slices
- 1 teaspoon(s) spicy brown mustard
- 1/4 cup(s) alfalfa sprouts
- 1/2 tablespoon(s) olive oil
Instructions
- Add oil to skillet, warm on medium heat.
- Saute green peppers and onions for about 2-3 minutes.
- Set aside.
- Place bread slices into pan; add vegan cheese, sauteed peppers and onions, tomatoes, cucumber, lettuce, spinach, and pickle atop of bread slice.
- Grill sandwich until crispy and golden brown on both sides.
- Remove from heat.
- Add sprouts and mustard.
- Cut in half and enjoy!.
