Avocado, Black Bean & Papaya Salad
Avocado, black beans, and papaya come together for a scrumptious salad that will tantalize your taste buds. Great for an appetizer or a light lunch.

- 3 organic avocados
- 1 lime ( reserve 2 teaspoons of lime juice for salad)
- 1 papaya, peeled, de-seeded, and cut into 0.5 inch pieces
- 1 tablespoon(s) red onion, chopped
- 1 tablespoon(s) fresh cilantro, chopped
- 1/8 teaspoon(s) kosher salt
- 1/2 cup(s) Black beans, drained and rinsed
Half and pit the avocados.
Peel the rind away with a spoon making sure to keep the avocado half as whole as possible.
Place one the avocado half on a plate and squeeze lime juice on top of the avocado half.
Chop the remaining avocado into a medium bowl, squeeze some lime juice on top of the chopped avocado and toss gently.
Mix in the papaya, red onion, cilantro, salt and black beans.
Spoon into the avocado halves and serve.
