Avocado, Black Bean & Papaya Salad

Avocado,  black beans, and papaya come together for a scrumptious salad that will tantalize your taste buds. Great for an appetizer or a light lunch.

Ingredients
  

  • 3 organic avocados
  • 1 lime ( reserve 2 teaspoons of lime juice for salad)
  • 1 papaya, peeled, de-seeded, and cut into 0.5 inch pieces
  • 1 tablespoon(s) red onion, chopped
  • 1 tablespoon(s) fresh cilantro, chopped
  • 1/8 teaspoon(s) kosher salt
  • 1/2 cup(s) Black beans, drained and rinsed

Instructions
 

  • Half and pit the avocados.
  • Peel the rind away with a spoon making sure to keep the avocado half as whole as possible.
  • Place one the avocado half on a plate and squeeze lime juice on top of the avocado half.
  • Chop the remaining avocado into a medium bowl, squeeze some lime juice on top of the chopped avocado and toss gently.
  • Mix in the papaya, red onion, cilantro, salt and black beans.
  • Spoon into the avocado halves and serve.
