Apple Butter Nut Bread
Butter up to this breakfast bread. Prepared from scratch, it puts the good in baked goods. Did we mention it also fits well into a balanced eating regimen? It could be the best thing since sliced bread.

- 1 cooking spray
- 1 3/4 cup(s) whole wheat flour
- 1 1/2 teaspoon(s) baking powder
- 1 dash(es) salt
- 1 teaspoon(s) nutmeg
- 3/4 cup(s) pecans
- 3/4 cup(s) raisins
- 2 ripe bananas
- 1/3 cup(s) vanilla Greek yogurt
- 3/4 cup(s) apple butter
- 1 cup(s) egg substitute
- 1/8 cup(s) almond milk
- 4 tablespoon(s) maple syrup
Preheat oven to 350 F.
Use cooking spray to coat a 9 x 5-inch loaf pan; set aside.
Whisk together flour, baking powder, salt and nutmeg in a large mixing bowl.
Stir in nuts and raisins.
Transfer to a piece of wax paper.
In the same bowl, mash the bananas with a fork.
Whisk together yogurt, apple butter, egg substitute, almond milk, and maple syrup, beating well.
Add dry ingredients and stir.
Pour batter into a prepared pan and bake in the center of the oven for 1 hour or until a toothpick inserted in center comes out clean.
Let cool for 10 minutes on a wire rack.
Serve.
