Apple Butter Nut Bread

Butter up to this breakfast bread. Prepared from scratch, it puts the good in baked goods. Did we mention it also fits well into a balanced eating regimen? It could be the best thing since sliced bread.

Ingredients
  

  • 1 cooking spray
  • 1 3/4 cup(s) whole wheat flour
  • 1 1/2 teaspoon(s) baking powder
  • 1 dash(es) salt
  • 1 teaspoon(s) nutmeg
  • 3/4 cup(s) pecans
  • 3/4 cup(s) raisins
  • 2 ripe bananas
  • 1/3 cup(s) vanilla Greek yogurt
  • 3/4 cup(s) apple butter
  • 1 cup(s) egg substitute
  • 1/8 cup(s) almond milk
  • 4 tablespoon(s) maple syrup

Instructions
 

  • Preheat oven to 350 F.
  • Use cooking spray to coat a 9 x 5-inch loaf pan; set aside.
  • Whisk together flour, baking powder, salt and nutmeg in a large mixing bowl.
  • Stir in nuts and raisins.
  • Transfer to a piece of wax paper.
  • In the same bowl, mash the bananas with a fork.
  • Whisk together yogurt, apple butter, egg substitute, almond milk, and maple syrup, beating well.
  • Add dry ingredients and stir.
  • Pour batter into a prepared pan and bake in the center of the oven for 1 hour or until a toothpick inserted in center comes out clean.
  • Let cool for 10 minutes on a wire rack.
  • Serve.
