Zucchini Pasta
Squash the notion that green vegetables don't mix to make a palate-pleasing pasta dish. This zucchini-infused pasta dish is downright delicious... and healthy to boot.

- 2 zucchinis
- 1 tablespoon(s) olive oil
- 1/4 cup(s) water
- 1 onions
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
Cut lengthwise slices from zucchini using a vegetable peeler, resembling spaghetti.
Stop when reaching seeds.
Peel all around leaving seeded strip in center.
Discard seeds.
Heat olive oil in a pan over medium heat; saute onions and then cook and stir zucchini in the hot oil for 1 minute.
Add water and cook until zucchini is softened, 5 to 7 minutes.
Season with salt and pepper.
