Zucchini Pasta

Squash the notion that green vegetables don't mix to make a palate-pleasing pasta dish. This zucchini-infused pasta dish is downright delicious... and healthy to boot.

Ingredients
  

  • 2 zucchinis
  • 1 tablespoon(s) olive oil
  • 1/4 cup(s) water
  • 1 onions
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper, to taste

Instructions
 

  • Cut lengthwise slices from zucchini using a vegetable peeler, resembling spaghetti.
  • Stop when reaching seeds.
  • Peel all around leaving seeded strip in center.
  • Discard seeds.
  • Heat olive oil in a pan over medium heat; saute onions and then cook and stir zucchini in the hot oil for 1 minute.
  • Add water and cook until zucchini is softened, 5 to 7 minutes.
  • Season with salt and pepper.
