Vegetarian Spinach Risotto

- 1 package frozen chopped spinach
- 1/8 cup(s) unsweetened applesauce
- 1 onion, chopped
- 1 clove garlic, minced
- 2 cup(s) uncooked rice
- 4 cup(s) vegetable stock
Combine spinach, applesauce, onion and garlic in saucepan.
Cook over medium heat, stirring occasionally.
Place mixture in blender and process until smooth, return to pan.
Add brown rice and vegetable stock; cover.
Cook on low heat for about 15 to 20 minutes or until rice is soft and fluffy.
Serve.
