This warm and scrumptious cornbread taste just like the one your grandma used to make -- except much healthier! The vegan version has a slightly crunchy texture with a mouthwatering, buttery taste to boot. It's sure to leave you feeling corny!

Ingredients
  

  • 1 cooking spray
  • 1 cup(s) whole wheat flour
  • 1 cup(s) corn meal
  • 3 teaspoon(s) sugar
  • 1 1/2 teaspoon(s) baking powder
  • 1 teaspoon(s) salt
  • 1 cup(s) almond milk
  • 1/4 cup(s) olive oil
  • 1 3/4 cup(s) canned pumpkin

Instructions
 

  • Heat oven to 400 degrees F.
  • Spray pan with cooking spray.
  • In bowl, mix flour.
  • corn meal, sugar, baking powder and salt.
  • In a separate bowl mix milk, oil and pumpkin.
  • Pour over flour mixture.
  • Stir until just combined.
  • Pour into baking pan and bake for 20 minutes.
