Simple Black Bean Roll-Ups
When it comes to black beans, most people don't think outside the box... or can. These black bean roll-ups are a satisfying snack that is a hit with adults and kids alike. Easy and enjoyable!

- 1 teaspoon(s) olive oil
- 1/4 cup(s) onion, minced
- 1 teaspoon(s) garlic, minced
- 15 ounce(s) can of black beans, drained and rinsed
- 1 teaspoon(s) cumin
- 2 tablespoon(s) reduced fat sour cream
- 2 tablespoon(s) reduced fat, Mexican 4 cheese blend
- 4 whole wheat tortillas
- 1 avocado, diced
Heat olive oil in skillet over medium-high heat.
Add onion and garlic to skillet and saute until clear.
Add black beans and cumin to the skillet.
Mash with potato masher.
Cook for 10 minutes and remove from heat.
Heat tortillas according to package directions.
Top one tortilla with a thin layer of bean spread, sour cream, cheese and then add avocado.
Roll tortilla and serve.
