Ingredients
  

  • 1 teaspoon(s) olive oil
  • 1/4 cup(s) onion, minced
  • 1 teaspoon(s) garlic, minced
  • 15 ounce(s) can of black beans, drained and rinsed
  • 1 teaspoon(s) cumin
  • 2 tablespoon(s) reduced fat sour cream
  • 2 tablespoon(s) reduced fat, Mexican 4 cheese blend
  • 4 whole wheat tortillas
  • 1 avocado, diced

Instructions
 

  • Heat olive oil in skillet over medium-high heat.
  • Add onion and garlic to skillet and saute until clear.
  • Add black beans and cumin to the skillet.
  • Mash with potato masher.
  • Cook for 10 minutes and remove from heat.
  • Heat tortillas according to package directions.
  • Top one tortilla with a thin layer of bean spread, sour cream, cheese and then add avocado.
  • Roll tortilla and serve.
