Roasted Pork Tenderloin
Prepare for a pork dish that brings plenty of TLC -- as in tenderloin loving care. Infused with fresh rosemary and garlic, enjoy this rousing rendition of the other white meat. It is truly a crowd pleaser.

- 1 cooking spray
- 24 ounce(s) pork tenderloins (about 3/4- lbs each)
- 1 clove garlic
- 1 tablespoon(s) extra virgin olive oil
- 1 dash(es) salt
- 1/10 ounce(s) rosemary
- 1 dash(es) pepper
Preheat oven to 450 F.
Use cooking spray to grease a 9 x 13-inch roasting pan rack.
Trim tenderloin of fat and any silver skin and pat dry with a paper towel.
Pierce pork loin with a fork.
Mix garlic, oil, salt, rosemary and pepper in a small bowl until paste forms.
Rub paste on pork.
Place pork on rack in roasting pan.
Bake, uncovered for 30 minutes.
Turning tenderloins once while baking.
Use a cooking thermometer to make sure it reads 155.
Cover pork and let stand 15 minutes more.
Transfer to a cutting board and let meat rest 5 minutes.
Slice into rings and serve.
