- 8 red skinned potatoes
- 3 green onions, chopped
- 24 tablespoon(s) light mayonnaise
- 1/8 cup(s) unsweetened almond milk
- 2 tablespoon(s) distilled white vinegar
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) ground black pepper
In a large pot, bring salted water to a boil.
Add red skinned potatoes and cook until potatoes are tender but firm about 15 minutes.
Drain and cut into 1-inch cubes.
In a large bowl, combine potatoes and green onions.
In another bowl, whisk together light mayonnaise, almond milk, white vinegar, salt and pepper.
Pour this mixture over potatoes and onions.
Combine until potatoes are evenly coated.
Cover and chill in refrigerator for at least 2 hours before serving.
