Ingredients
  

  • 1 cooking spray
  • 3 tablespoon(s) coconut oil
  • 1/3 cup(s) flour
  • 2 1/2 cup(s) almond milk
  • 1/2 cup(s) low fat grated Parmesan cheese
  • 1/2 cup(s) low fat shredded cheddar cheese
  • 1/2 cup(s) low fat ricotta cheese
  • 6 cup(s) elbow macaroni, cooked
  • 1 dash(es) salt
  • 4 ounce(s) lean turkey sausage, cooked and chopped
  • 10 ounce(s) butter crackers, crushed

Instructions
 

  • Preheat oven to 375 F.
  • Use cooking spray to grease a casserole dish and set aside.
  • In a large saucepan over medium heat, coconut oil.
  • Whisk in the flour and cook, stirring for 2 to 3 minutes until the mixture is blended well.
  • Gradually whisk in the almond milk, and cook until the mixture thickens.
  • Stir in the cheeses until all the cheese has melted.
  • Remove from the heat and stir in the macaroni, salt, and sausage.
  • Spoon in the mixture into the casserole dish.
  • In a small bowl, stir together the crackers and sprinkle over the macaroni.
  • Bake for 30 to 35 minutes.
  • Remove from heat and serve warm.
