Instructions
In a large soup pot, heat oil over medium heat.
Add the celery, carrot, and onion.
Cook about 7 minutes.
Stir in garlic, bay leaf, oregano, salt and pepper.
Add vegetable broth, water, lentils and tomatoes.
Bring to a boil and then reduce heat to a simmer.
Cover and let cook for about 1 hour.
Stir in lemon juice and rainbow chard and stir until wilted.
Serve hot.
