- 15 small red potatoes about 2 inches in diameter
- 3 tablespoon(s) extra virgin olive oil
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) freshly ground black pepper
- 4 to 5 rosemary sprigs, about 3 inches long
- 6 teaspoon(s) dried sage, or better to use 6 fresh sage sprigs
- 1 teaspoon(s) garlic powder
Preheat oven to 325 degrees Fahrenheit.
Place potatoes in a baking dish that is not too deep but allowing the potatoes to fit tightly into a single layer.
Pour olive oil over potatoes and turn over the potatoes ensuring that potatoes are evenly coated.
Season with garlic powder, salt, and pepper, again turning potatoes to ensure even coating.
Place rosemary and sage sprigs under potatoes.
Roast potatoes until you start to see the skins wrinkle and when poked with a toothpick potatoes are tender and soft.
This usually takes about an hour and 15 minutes.
Transfer to serving the dish and serve.
