Heart Smart Corn Fritters

It's okay to be corny, especially when it involves these fritters. Just because they are fritters doesn't mean you need to fret. They are prepared in a healthy fashion. Add them to your recipe repertoire.

Ingredients
  

  • 1 cooking spray
  • 1/4 cup(s) chopped onion
  • 1/4 cup(s) chopped red pepper
  • 2 cup(s) sweet corn kernels
  • 1/4 cup(s) all purpose flour
  • 1/2 teaspoon(s) baking powder
  • 1 dash(es) salt, to taste
  • 1 dash(es) black pepper, to taste
  • 1/10 cup(s) almond milk
  • 1/2 teaspoon(s) hot sauce
  • 1 1/2 tablespoon(s) sunflower oil
  • 2 cup(s) egg substitute

Instructions
 

  • Place a medium saucepan over medium heat and add cooking spray.
  • Add the onion and pepper and cook for about 5 minutes.
  • Add the corn kernels and continue cooking for a 1 more minute.
  • Remove from the heat and set aside.
  • In a large bowl, mix together, flour, baking powder, salt and black pepper.
  • Add the egg substitute, almond milk, and hot pepper sauce and stir mixing well.
  • Add the corn mixture and stir.
  • Place a skillet over medium-low heat and add oil.
  • When oil is hot, place 5 tablespoons of the fritter mixture into the pan.
  • Using a spatula, flatten them and cook until lightly browned.
  • Turn and cook the other side until lightly browned.
  • Once cooked remove excess oil from fritters and serve.
