Place a medium saucepan over medium heat and add cooking spray.
Add the onion and pepper and cook for about 5 minutes.
Add the corn kernels and continue cooking for a 1 more minute.
Remove from the heat and set aside.
In a large bowl, mix together, flour, baking powder, salt and black pepper.
Add the egg substitute, almond milk, and hot pepper sauce and stir mixing well.
Add the corn mixture and stir.
Place a skillet over medium-low heat and add oil.
When oil is hot, place 5 tablespoons of the fritter mixture into the pan.
Using a spatula, flatten them and cook until lightly browned.
Turn and cook the other side until lightly browned.
Once cooked remove excess oil from fritters and serve.
