Delicious Dijon Salmon

Ingredients
  

  • 2 tablespoon(s) extra virgin olive oil
  • 9 teaspoon(s) dijon mustard
  • 1 1/2 tablespoon(s) honey
  • 1/4 cup(s) bread crumbs
  • 1 tablespoon(s) cilantro
  • 2 tablespoon(s) lemon juice
  • 1/4 cup(s) rolled oats, toasted
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 4 salmon fillets

Instructions
 

  • Preheat the oven to 400 F.
  • In a small bowl, combine oil, mustard and honey.
  • Set aside.
  • In a separate bowl, mix together bread crumbs, cilantro, lemon juice, and rolled oats.
  • Brush each salmon lightly with the honey mustard mixture and sprinkle the tops of the fillets with the bread crumb mixture.
  • Bake salmon for 15 minutes, or until salmon flakes easily with a fork.
  • Season with salt and pepper.
