Ingredients
  

  • 2 1/2 cup(s) whole wheat flour
  • 1 cup(s) unsweetened applesauce
  • 1 cup(s) unsweetened cocoa powder
  • 2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1 cup(s) unsweetened soy milk
  • 2 tablespoon(s) lemon juice
  • 6 tablespoon(s) coconut oil
  • 1/2 cup(s) mashed banana
  • 1 1/2 teaspoon(s) vanilla
  • 1 1/2 cup(s) cacao nibs

Instructions
 

  • Preheat oven to 400 degrees.
  • Grease 12 large muffin cups; set aside.
  • Combine flour, applesauce, cocoa powder, baking soda and salt in a large bowl.
  • Combine Unsweetened soy milk, lemon juice, coconut oil, banana and vanilla in small bowl until blended.
  • Stir into flour mixture just until moistened.
  • Fold in Cacao Nib.
  • Spoon into prepared muffin cups, filling half full.
  • Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean.
  • Cool in pan on wire rack 5 minutes.
  • Remove from pan.
  • Cool for a few minutes.
  • Serve.
