- 1 tablespoon(s) extra virgin olive oil
- 1 wild leeks, chopped
- 1 cup(s) whole wheat couscous
- 1/3 cup(s) pomegranate seeds
- 1 1/2 cup(s) vegetable broth
- 1 tablespoon(s) white wine vinegar
- 4 tablespoon(s) parsley
- 1 teaspoon(s) salt
- 1 teaspoon(s) lemon zest
Heat the oil in a large saucepan over medium heat.
Add the leeks and saute for 1 minute.
Stir in the couscous.
Add 1 cup of vegetable stock, about 3/4 of the pomegranate seeds, and vinegar and bring to a boil over hight heat.
Cover and turn off the heat.
Keep the lid on until liquid is absorbed, about 7 minutes.
Remove from the burner and stir in the parsley and lemon zest.
Add salt.
Sprinkle with the remaining pomegranate seeds.
Serve.
