Chicken and Brussels Sprouts Gnocchi
We've put a completely innovative spin on good old gnochi. Combined with chicken and Brussels sprouts, the final product is a work of culinary art. Make it your main meal tonight.

- 2 chicken breast, boneless and skinless, cut in half
- 1/2 cup(s) lemon juice
- 1/2 teaspoon(s) onion powder
- 1 dash(es) ground black pepper, for chicken rub & pasta
- 1 dash(es) salt, to taste for chicken rub & pasta
- 2 teaspoon(s) oregano
- 2 cup(s) Brussels sprouts, trimmed and quartered
- 2 tablespoon(s) olive oil
- 2 cup(s) gnocchi, cooked
- 1 teaspoon(s) lemon zest
- 1/4 cup(s) pine nuts, toasted
- 1/4 cup(s) grated Parmesan cheese
Preheat oven to 400 degrees FToss in brussels sprouts in a bowl with olive oil to give nice coat.
Transfer to rimmed baking sheet, roast for 20 minutes or until browned and tender.
Pre-heat grill to medium-high heat and lightly grease grill to avoid sticking.
Dip chicken into lemon juice, and sprinkle with onion powder, ground black pepper, salt and oregano.
(Make sure to throw away any leftover lemon juice)Grill chicken on both sides for about 10-15 minutes or until no longer pink on the inside.
Remove from grill and place on a plate.
Cut chicken into small chunks.
Cook gnocchi according to package.
Combine cut chicken, cooked gnocchi and roasted Brussels sprouts in a large bowl and add remaining ingredients.
Serve and enjoy!.
