- 1 3/4 cup(s) canned sweet kernel corn, rinsed and drained
- 3/4 cup(s) fresh cilantro, chopped
- 1 1/2 cup(s) cherry tomatoes, halved
- 1 tablespoon(s) olive oil
- 5 1/3 tablespoon(s) red wine vinegar
- 2 teaspoon(s) adobo seasoning
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
In a medium bowl, mix black beans, corn, cilantro and cherry tomatoes.
Drizzle with enough olive oil to coat entire mixture by stirring.
Add 1/3 cup of red wine vinegar.
