- 1 cup(s) low fat ricotta cheese
- 4 ounce(s) can shrimp, rinsed and drained
- 2 tablespoon(s) low fat mayonnaise
- 1 ounce(s) low fat yogurt
- 1 ounce(s) Irish Mist liqueur
- 1 tablespoon(s) lemon juice
- 1 tablespoon(s) parsley
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 16 ounce(s) cocktail rye bread
- 30 small shrimp, cooked and peeled
In a medium bowl, combine the ricotta cheese, shrimp, mayonnaise, yogurt, liqueur, lemon juice, parsley, salt, and pepper.
Stir until ingredients are smooth.
Arrange the slices of bread on a baking sheet.
Broil the toast for 2 to 3 minutes on each side.
Spread one side of each slice with the shrimp mixture, and return to the broiler and cook until mixture browns.
Remove from the broiler and place cooked shrimp onto of each slice.
Serve warm.
