Apple and Broccoli Curry

Ingredients
  

  • 1 1/2 teaspoon(s) ground cumin
  • 1/2 teaspoon(s) ground coriander
  • 1/2 teaspoon(s) pepper
  • 1/2 teaspoon(s) ground cardamom
  • 1/4 teaspoon(s) ground cloves
  • 1/2 teaspoon(s) spicy brown mustard
  • 1/2 teaspoon(s) red chili flakes
  • 1/2 teaspoon(s) ground turmeric
  • 2 cup(s) broccoli florets
  • 2 apples, quartered and cored
  • 1 1/2 garlic cloves, peeled and minced
  • 1/3 cup(s) onion, chopped
  • 1/4 cup(s) coconut milk
  • 1/3 cup(s) cashews
  • 2 tablespoon(s) parsley
  • 2 cup(s) organic brown rice

Instructions
 

  • Preheat oven to 400 F.
  • Meanwhile, cook brown rice according to package directions.
  • Combine all ingredients except the cashews and parsley in a 9 x13 inch baking dish.
  • Roast for 30 minutes, stirring once halfway through.
  • Reduce heat to low and cook for another 20 minutes.
  • Sprinkle with cashews and parsley.
  • Serve atop brown rice.
