
Vegan Low Fat Cornbread
This warm and scrumptious cornbread taste just like the one your grandma used to make — except much healthier! The vegan version has a slightly crunchy texture with a mouthwatering, buttery taste to boot. It’s sure to leave you feeling corny!
Ingredients
- 1 cooking spray
- 1 cup(s) whole wheat flour
- 1 cup(s) corn meal
- 3 teaspoon(s) sugar
- 1 1/2 teaspoon(s) baking powder
- 1 teaspoon(s) salt
- 1 cup(s) almond milk
- 1/4 cup(s) olive oil
- 1 3/4 cup(s) canned pumpkin
Instructions
- Heat oven to 400 degrees F.
- Spray pan with cooking spray.
- In bowl, mix flour.
- corn meal, sugar, baking powder and salt.
- In a separate bowl mix milk, oil and pumpkin.
- Pour over flour mixture.
- Stir until just combined.
- Pour into baking pan and bake for 20 minutes.
