
Strawberry Spinach Salad and Buttermilk Poppy Seed Dressing

Ingredients
- 1/4 cup(s) walnuts, chopped; For Salad
- 6 cup(s) fresh spinach; For Salad
- 1 1/2 cup(s) fresh strawberries, sliced; For Salad
- 1/4 cup(s) non-fat plain Greek yogurt; For Dressing
- 1/4 cup(s) low-fat buttermilk; For Dressing
- 3 teaspoon(s) granulated sugar; For Dressing
- 3/4 teaspoon(s) poppy seeds; For Dressing
- 1 teaspoon(s) lemon juice; For Dressing
- 1/8 teaspoon(s) salt; For Dressing
- 1/8 teaspoon(s) pepper, to taste; For Dressing
Instructions
- In a small bowl, whisk together the yogurt, buttermilk, sugar, lemon juice, poppy seeds, salt, and pepper.
- Refrigerate to chill dressing.
- At least 30 minutes.
- In a large bowl, toss spinach, strawberries, and walnuts.
- Pour dressing on top of salad and toss gently.
- Serve.
