Spinach-Mushroom Scramble

It’s no yolk. There are plenty of ways to liven up those egg whites. Toss in some spinach and mushrooms for a veggie delight. It is definitely all it’s cracked up to be.

Ingredients
  

  • 1 cup(s) egg whites
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 1/2 tablespoon(s) olive oil
  • 1/2 cup(s) sliced mushrooms
  • 1/2 cup(s) spinach, chopped
  • 1/8 cup(s) reduced fat cheddar cheese

Instructions
 

  • In a small bowl, whisk egg whites, salt and pepper.
  • In a nonstick skillet, heat olive oil over medium heat.
  • Add mushrooms and cook for about 5 minutes.
  • Add spinach and cook until wilted.
  • Reduce heat and add egg mixture.
  • Add in cheese and stir for 1-2 minutes until melted.
  • Serve hot.
