Ingredients
  

  • 1 tablespoon(s) extra virgin olive oil
  • 2 celery stalks, chopped
  • 2 cup(s) carrots, chopped
  • 1 cup(s) onion, chopped
  • 3 garlic cloves, minced
  • 3 teaspoon(s) bay leaves
  • 2 teaspoon(s) oregano
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 4 cup(s) vegetable broth
  • 32 ounce(s) water
  • 2 cup(s) lentils, rinsed
  • 1 can diced tomatoes
  • 2 tablespoon(s) lemon juice
  • 1/2 cup(s) rainbow chard

Instructions
 

  • In a large soup pot, heat oil over medium heat.
  • Add the celery, carrot, and onion.
  • Cook about 7 minutes.
  • Stir in garlic, bay leaf, oregano, salt and pepper.
  • Add vegetable broth, water, lentils and tomatoes.
  • Bring to a boil and then reduce heat to a simmer.
  • Cover and let cook for about 1 hour.
  • Stir in lemon juice and rainbow chard and stir until wilted.
  • Serve hot.
