Ingredients
  

  • 16 ounce(s) chicken, quartered, rinsed and patted dry
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) pepper
  • 1 package baby spinach
  • 1 onions, sliced
  • 8 kalmata olives
  • 4 tablespoon(s) light Italian dressing
  • 1 orange, peeled and chopped

Instructions
 

  • Preheat grill to medium-high heat.
  • Combine salt and pepper.
  • Rub chicken with mixture.
  • Place chicken on the grill.
  • Close cover and grill 8 minutes on each side.
  • Set aside.
  • Place spinach in a large bowl.
  • Toss the onion, olives, and orange on top of the spinach.
  • Chop chicken into bite size pieces and add to salad.
  • Dress the salad lightly with dressing and serve.
