
Egg Salad
Move over to the light side with this classic egg salad. Get cracking and serve up this hearty lunch today!
Ingredients
- 6 hard boiled eggs, chilled and peeled
- 4 tablespoon(s) light mayonnaise
- 1 lemon, zest (0.5 tsp) and juice of (1.5 tsp)
- 1/3 cup(s) celery, finely diced
- 2 green onions, finely sliced
- 1 tablespoon(s) fresh parsley, minced
- 1/8 teaspoon(s) salt, to taste
- 1/8 teaspoon(s) freshly ground pepper, to taste
Instructions
- Combine eggs, light mayonnaise, lemon juice, celery, green onions, and parsley in a medium bowl.
- With your hands or a potato masher mix egg mixture until desired consistency.
- Season with salt and pepper.
- Spread over bread, roll or croissant or over a lettuce salad.
