Carrot and Fig Salad

Figs meet carrots. Carrots meet figs. Together, these perfectly complement each other in this side salad. Lemon juice and brown sugar make a gourmet glaze that will be kid-tested, parent-approved.

Ingredients
  

  • 6 carrots, medium
  • 1 cup(s) black figs
  • 1 lemon
  • 2 oranges, to taste
  • 1/4 cup(s) brown sugar
  • 1 dash(es) salt, to taste
  • 2 tablespoon(s) poppy seeds

Instructions
 

  • Shred carrots finely in a food processor.
  • Then place in a serving bowl.
  • Place figs in the bowl with carrots.
  • Squeeze the lemon juice onto carrots and figs.
  • Mix brown sugar with carrots and figs.
  • Add salt and poppy seeds to the salad, stir and mix.
  • Store in the refrigerator then serve when ready.
