
Spanish Style Quinoa
Savory Spanish quinoa makes for a main or side dish that will make you say “Ole’!”
Ingredients
- 1 cup(s) dry quinoa, rinsed drained and patted dry
- 1/4 cup(s) onion, chopped
- 2 cup(s) organic low sodium vegetable broth
- 1/2 cup(s) organic tomato sauce
- 2 teaspoon(s) chili powder
- 1/4 teaspoon(s) garlic powder
- 1/4 teaspoon(s) ground cumin
- 1/4 teaspoon(s) salt, to taste
- 1/4 teaspoon(s) pepper, to taste
- 2 tablespoon(s) fresh cilantro, for garnish
Instructions
- In a large saucepan over medium heat.
- Add quinoa and cook until golden brown, about 4-5 minutes.
- Add onion, broth, tomato sauce, garlic powder, ground cumin and chili powder and bring to a boil.
- Cover and reduce heat to low.
- Simmer for 20 minutes.
- Remove from heat, fluff with a fork and season with salt and pepper.
- Garnish with chopped cilantro.
- Serve and enjoy.
