Roasted Pork Tenderloin

Ingredients
  

  • 1 cooking spray
  • 24 ounce(s) pork tenderloins (about 3/4- lbs each)
  • 1 clove garlic
  • 1 tablespoon(s) extra virgin olive oil
  • 1 dash(es) salt
  • 1/10 ounce(s) rosemary
  • 1 dash(es) pepper

Instructions
 

  • Preheat oven to 450 F.
  • Use cooking spray to grease a 9 x 13-inch roasting pan rack.
  • Trim tenderloin of fat and any silver skin and pat dry with a paper towel.
  • Pierce pork loin with a fork.
  • Mix garlic, oil, salt, rosemary and pepper in a small bowl until paste forms.
  • Rub paste on pork.
  • Place pork on rack in roasting pan.
  • Bake, uncovered for 30 minutes.
  • Turning tenderloins once while baking.
  • Use a cooking thermometer to make sure it reads 155.
  • Cover pork and let stand 15 minutes more.
  • Transfer to a cutting board and let meat rest 5 minutes.
  • Slice into rings and serve.
