Sub-way? No-way! This vegetable sandwich is better than any sub place! You’ll be packing your lunch instead of dining out. Stuffed with sauteed green peppers and onions, it’s a sandwich that will get the job done.

Ingredients
  

  • 2 whole wheat bread slices
  • 1/4 cup(s) green peppers, chopped
  • 1/4 cup(s) onions, chopped
  • 2 cucumber slices, cut in half
  • 2 grape tomato, sliced in half
  • 1/4 cup(s) romaine lettuce
  • 1/4 cup(s) baby spinach
  • 1 vegan cheddar style slices
  • 1 kosher dill sandwich slices
  • 1 teaspoon(s) spicy brown mustard
  • 1/4 cup(s) alfalfa sprouts
  • 1/2 tablespoon(s) olive oil

Instructions
 

  • Add oil to skillet, warm on medium heat.
  • Saute green peppers and onions for about 2-3 minutes.
  • Set aside.
  • Place bread slices into pan; add vegan cheese, sauteed peppers and onions, tomatoes, cucumber, lettuce, spinach, and pickle atop of bread slice.
  • Grill sandwich until crispy and golden brown on both sides.
  • Remove from heat.
  • Add sprouts and mustard.
  • Cut in half and enjoy!.
