Ingredients
  

  • 2 tilapia fillets
  • 2 1/2 tablespoon(s) olive oil
  • 1 teaspoon(s) cumin
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 cucumber, halved lengthwise, sliced thin
  • 1 cup(s) cherry tomatoes
  • 3 tablespoon(s) honey
  • 1 ounce(s) lime juice; divided
  • 2 tablespoon(s) basil
  • 1/2 ounce(s) shaved fennel
  • 3 cup(s) spinach, raw

Instructions
 

  • Rub the tilapia with 1 tablespoon of oil, cumin, salt, and pepper.
  • Set aside.
  • Heat 1 tablespoon of oil in a medium skillet over medium-high heat.
  • In a small bowl, whisk the honey and.
  • 5 oz of the lime juice together.
  • Add the fish brushing it with the honey lime glaze and cook until the it is cooked through and pulls apart with a fork.
  • About 3 to 4 minutes on each side.
  • Place the cucumber, tomatoes, basil, and fennel leaves in a bowl.
  • Drizzle with remaining oil and the remaining lime juice.
  • Place the fish fillets on top of the spinach leaves and add the cucumber mixture.
  • Serve immediately.
