
Simple Black Bean Roll-Ups
When it comes to black beans, most people don’t think outside the box… or can. These black bean roll-ups are a satisfying snack that is a hit with adults and kids alike. Easy and enjoyable!

Ingredients
- 1 teaspoon(s) olive oil
- 1/4 cup(s) onion, minced
- 1 teaspoon(s) garlic, minced
- 15 ounce(s) can of black beans, drained and rinsed
- 1 teaspoon(s) cumin
- 2 tablespoon(s) reduced fat sour cream
- 2 tablespoon(s) reduced fat, Mexican 4 cheese blend
- 4 whole wheat tortillas
- 1 avocado, diced
Instructions
- Heat olive oil in skillet over medium-high heat.
- Add onion and garlic to skillet and saute until clear.
- Add black beans and cumin to the skillet.
- Mash with potato masher.
- Cook for 10 minutes and remove from heat.
- Heat tortillas according to package directions.
- Top one tortilla with a thin layer of bean spread, sour cream, cheese and then add avocado.
- Roll tortilla and serve.
