Vegetarian Spinach Risotto

Ingredients
  

  • 1 package frozen chopped spinach
  • 1/8 cup(s) unsweetened applesauce
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 cup(s) uncooked rice
  • 4 cup(s) vegetable stock

Instructions
 

  • Combine spinach, applesauce, onion and garlic in saucepan.
  • Cook over medium heat, stirring occasionally.
  • Place mixture in blender and process until smooth, return to pan.
  • Add brown rice and vegetable stock; cover.
  • Cook on low heat for about 15 to 20 minutes or until rice is soft and fluffy.
  • Serve.
